I’m always on the hunt for new & innovative ways to increase self-care. But tonight, I’m kicking it w. a classic: breakfast for #dinner – just because I can. Proof you can fit bite-sized ideas anywhere. YWF recipes are all about keeping it simple and practical. Who’s got the time?
5 tbsp. chives
3 stalks of spring onion
handful of mixed greens
2 tbsp. butter
A drizzle of heavy cream: optional
Preheat oven to 450 degrees. When your oven is set, grab a cast iron skillet or oven proof pan and place 1 tbsp. of butter into skillet for about 10 minutes. During this time, carefully break eggs into a bowl, yolks whole. Take skillet out of oven, place remaining tab of butter in pan, pour in eggs, and quickly top with herbs & drizzle of cream. Bake until preferred set time (I used 7 minutes). Take pan out of oven, top with spring greens & serve with a carbohydrate of your choice. I didn’t use cheese, but it is surely welcome here. Enjoy!
